Listening to a "real" normal voice that can somewhat distinguish your needs.

It is all encompassing term for AI based voice interactions like alexa,  siri or other custom voice chat bots along with voice analytics to conduct sentiment analysis.

AI tools being applied to an IVR system to analyze voice calls for routing, metrics, ...etc.

I think IVR to some extent. Agree with others in terms of automated systems like Siri, Alexa, etc. as well
