I am working on a project to review 2025 Q1 job market data by country. I haven't found anything consistent that shows the unemployment rates, estimate of actual job openings and in what sectors. Can someone point me in the right direction?

In the UK you should try the Office of National Statistics - I think it has quite a lot of international data.
Similar to what was mentioned in an earlier post, the BLS and FRED Economic Data (St. Louis Fed) for US data could be a good place to start. For Europe, you could try Eurostat. The latest WEF Future of Jobs report could give you some high level insights depending on your needs.
